CATERING: THE IMPORTANCE OF INNOVATION AND NARRATIVEIn the Vision Plaza, the beating heart of SIGEP, the future of food service is outlined thanks to a full calendar of events. To open the works POLI.design with Identity and innovation: the last chance. Case studies in the food sector, which saw the participation of Gianpietro Sacchi, director and teacher of the ´Design Experience´ Higher Education courses at POLI.design; Benta Wiley, of the design and branding agency Between; Claudia d´Angelo, Fashion Heritage Manager; Cosimo Libardo of Nomad Consulting, a consultancy company for the world of coffee. During the talk they reflected on the increasing importance that the concepts of planning and managerial approach also have in the food sector, demonstrating how the search for operational efficiency remains a necessary objective, but is no longer sufficient for the success of a catering company. The tools to ensure a future of growth are instead a solid strategy of brand equity and storytelling - to build a strong and characterizing identity - business differentiation to reduce, by dividing them, the risks and innovation.
AL-INVEST VERDE PROMOTES DIALOGUE ON COFFEE AND SUSTAINABILITY IN LATIN AMERICACoffee and sustainability in Latin America: good practices, challenges and the way forward at the center of the AL-INVEST Verde´s appointment, a program funded by the European Union (EU) with the aim of promoting sustainable production chains in Latin America, where, according to FAO, five of the top ten coffee-producing countries are found. The meeting, the first of a long series to be held during 2023, brought together stakeholders from the public, private and third sectors, from the EU and various Latin American countries such as Colombia, Ecuador and Brazil, the ´International Coffee Organization – ICO, as well as Caffè Corsini and NKG Bero, to highlight the importance of building a deforestation-free, sustainable global coffee value chain, focusing on the tools and practices needed to address that challenge.
THE GELATO EUROPE CUP HAS BEGUN: FOUR PLACES FOR THE 2024 WORLD CHAMPIONSHIP AT SIGEPToday before two days of competition at the Gelato Europe Cup, the event which, for the first time at Sigep, will select the European teams that will compete at next year´s Gelato World Cup, also in Rimini.
The members of the seven teams – Austria, Italy, Spain, France, Germany, Hungary and the United Kingdom – today tried their hand at the decorated bowl test. The decoration phase followed after the creation of the ice cream, each according to their own recipe. ´Ice cream, in addition to being good, must also be beautiful. In fact, aesthetics is the first thing that attracts the customer´, explains Giancarlo Timballo, president of the Organizing Committee of the Gelato World Cup which promotes the event together with Con.pa.It, the Confederation of Italian Confectioners. Tomorrow will be the turn of two ´mystery box´ trials: each team will be assigned, according to the draw, a box containing a secret ingredient, with which they will have to develop and make a recipe in 40 minutes. The first test will focus on milk ice creams, the second on fruit ones.
The other tests will focus on the production of an ice cream cake and a decorated glass cup. There is also the creation of a decorative crunchy cake stand for the final buffet which will serve to present all the products made. The first four classified teams will enter the Gelato World Cup, scheduled for Sigep 2024.
SOON THERE WILL BE NO LONGER A COMPANY INDIFFERENT TO THE ENVIRONMENTAL SUSTAINABILITY PROCESSInvesting in environmental sustainability: cost or added value?, are the title and the question that opened the conference promoted by Italmopa-Associazione Industriali Mugnai d´Italia today at Sigep (until January 25th at the Rimini Exhibition Center). ´In reality – introduced Prof. Angelo Frascarelli, ISMEA President – in the not too distant future, an unsustainable company will no longer exist. It is consumption that shows us the way and each company chooses the most suitable path, from mandatory regulations that will grow to voluntary paths. Nielsen foresees three structural dynamics: the growing polarization of consumption between premium and low-cost products, sustainability as a central element and digital transformation. Those who today have a company close to the consumer have already embarked on the path, the intermediate processing companies have less awareness and instead need to act quickly´.
´The last few years - highlighted the President of Italmopa Andrea Valente - have seen a significant increase in initiatives that have concerned sustainability in general, and environmental sustainability in particular, both of the transformation processes and of the entire supply chain. It is necessary to highlight that sustainability will inevitably have an impact, from an economic point of view, on our companies and on the other players in the supply chain´.
The conference was also attended by Fabio Iraldo (Professor of Sustainability Management at the Sant´Anna School of Advanced Studies in Pisa), Emanuele Fontana (Head of Agribusiness of Crédit Agricole Italia) and Giuseppe Ferrandi (Head of the Sales Department for purchases of Esselunga bread and sweets).
ITALIA 20: PRESENTED THE FIRST LEAVENING PRODUCT MADE WITH TWENTY ITALIAN PDO AND PGI PRODUCTS
It´s called Italia 20 and it sets itself the ambitious goal of encompassing all the flavors of Italy in a single taste. The first leavened product made with 20 PDO and PGI products, one for each region, was presented in the Sigep Choco Arena. A dessert that aims to become an ambassador of the great Italian tradition abroad. Born from an idea of Mirco Della Vecchia, Master chocolatier and former president of CNA Agroalimentare, and created by the pastry chef and panettone specialist Beatrice Volta, Italia 20 contains, as the name suggests, 20 certified excellences of the country: from the PGI Piedmont hazelnut with Ciaculli late mandarin, a Slow Food presidium, via the Vin Santo del Chianti Doc, the Emilia-Romagna pear, the Sciacca strawberries, the Ribera orange, the Modica chocolate and the lemon from the Amalfi Coast, only to name a few.
THE FIFTH EDITION OF BREAD IN THE CITY ALSO LAUNCHED
After parading at the inaugural event, the nine Bread in the City teams moved to the Bakery Arena to stage the international baking championship. The teams, coming from China, Croatia, Israel, Italy, Mexico, the Netherlands, Peru, Portugal and Spain are made up of 2 competitors and 1 coach and compete in five different specialties: ciabatta and special breads; free loaves; viennese series; baking cakes; and savory presentation. Bread in the City is organized by SIGEP, coordinated by Richemont Club Italia, with the patronage of Richemont Club International.
